The Messy Middle

Just like society, UVK is in the messy middle right now. It's that uncomfortable stage of growth where everything feels a little unfinished. It's like writing the first draft of a screenplay. You read it back and think, This is terrible. This is never going to work. But that's what growth looks like. It's messy. We're transforming our space because we're trying to transform ourselves—not because we suck, but because we want to be better.

Change is uncomfortable. Sometimes it's scary. But it's also one of the few indisputable truths in the universe. Everything changes. The only question is whether you choose to grow with it or let it happen without you. Lately, that question has felt more important than ever. With so many great restaurants closing around us, there are days when it feels easier to play it safe. But we've never really been interested in playing it safe. The question isn't Can we survive? The question is, How do we survive without losing ourselves?

For us, the answer has always been the same. We go back to our core values: Each One, Teach One. Health Is Wealth. Classic Food. Better Ingredients. We've never been chasing Michelin stars. We've been chasing moments. The kind of moments that feel like dreams—a song that instantly takes you somewhere else, the smell of something cooking that reminds you of childhood, a perfect meal shared with someone you love, a room full of people laughing, or a conversation that lasts longer than dessert. Those are the moments that stay with us, and those are the moments we're trying to create.

That's where Muse comes in. Muse isn't a restaurant. Muse isn't a café. Muse is an idea. It's the belief that living a better life starts with creating better rituals. Because if you want a new life, you have to create new rituals—rituals that add something instead of taking something away, rituals that nourish instead of distract, rituals that help you become the person you're trying to be.

That's why, alongside our mushroom coffee, we asked Jimmy—our Alchemist—to disappear into the lab and create our signature collection of loose-leaf teas and botanical tinctures. Not because the world needed another wellness product, but because we wanted to create rituals we genuinely believed in. The teas have already become a favorite around here, and we've started sharing them with people beyond our four walls. Our tinctures are finding their way into mocktails, cocktails, and even simple glasses of still or sparkling water. They aren't gimmicks. They're another expression of what we've always believed: that small, intentional choices can make a meaningful difference over time.

Why now? Because this has always been who we are. Health has never been a trend for us; it's been part of our culture since day one. The world feels a little unbalanced right now. Maybe the answer isn't trying to control everything around us. Maybe it's learning to balance ourselves. We can't control the economy. We can't control social media. We can't control what tomorrow brings. But we can control the food we eat, the music we listen to, the conversations we have, and the rituals we practice every single day.

I've always loved something Voltaire wrote: "Cultivate your garden." To me, that means taking responsibility for your own little corner of the world. If each of us focused on cultivating our own garden instead of worrying about everyone else's, we'd all be a little better off. Our garden just happens to be a restaurant—a place where we try to nourish the mind, the body, and the soul through food, music, culture, and community.

That's what Muse is.

And honestly, we're still in the messy middle.

But for the first time in a long time, it feels like we're growing in the right direction.
